The Healthiest Pancakes in the World

So that statement is yet to be verified by the Guiness Book of World Records, but I'm pretty sure if there was a healthy pancakes category these would be the winner! These pancakes utilize one of my favorite new ingredients: tiger nuts. And if you haven't heard of tigernuts don't worry, they are pretty new to the health food market. And when you hear Gywneth Paltrow rave about them in a few months time, remember you heard it here first...

Tiger nuts are not actually nuts, but tiny tubers that that made up about 80% of our paleolithic ancestors diet (a common misbelief about a true Paleo diet is that it was mostly meat, in fact the majority of their nutrition was plant based).

For me, their main benefit is that they are amazing source of prebiotic fiber. Prebiotic fiber acts as food for our probiotic bacteria in the gut, so it is essential for good gut health. They are also a great source of Omega 6's, potassium and magnesium.

Tigernuts

The following recipe is gluten free, dairy free, soy free, egg free, nut free and downright delicious!

Tigernut Flour Cinnamon Pancakes

  • 1/2 cup tigernut flour
  • 1/4 cup coconut flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • Pinch of Himalayan sea salt
  • 1/2 teaspoon apple cider vinegar
  • 1 cup coconut milk
  • Flaxseed egg replacement: use four tablespoons ground flaxseed mixed with 12 tablespoons water. Mix well and leave to thicken for 10 minutes

Combine all wet ingredients in a mixing bowl. Combine all dry ingredients in a separate bowl, then gradually whisk in to the wet ingredients, ensuring no lumps.

Heat one tablespoon of coconut oil in a pan, and then gently drop the pancake batter in. Cook until golden brown on each side.

I've served mine with coconut cream and wild blueberries, but they make a perfect vehicle for any of your favorite pancake toppings, savory or sweet.
