Glow For It: TigerNut and Carrot Muffins

I love baked goods as much as the next person, but even some of the 'healthier' recipes can contain a lot of sugar (yes, coconut oil and coconut sugar is still fat and sugar)! This recipe (adapted from Organic Gemini) utilities the natural sweetness of bananas, carrots and TigerNuts, doesn't include any added sugars and uses just one tablespoon of coconut oil.

I aim to eat at least one serving of vegetables with everything I eat (including smoothies, snacks, etc), and these pack a double punch with both carrots and TigerNuts (which are technically a root vegetable).

These muffins are amazing whilst still warm out of the oven (smothered in nut butter) and also keep well in the refrigerator for up to a week (if you can make them last that long)!

TigerNut and Carrot Muffins

  • 2 ripe bananas
  • 3/4 cup applesauce
  • 3 flaxseed 'eggs' (3 tablespoons ground flaxseed mixed with 9 tablespoons water and left to thicken for 10 minutes)
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla essence
  • 1 & 1/2 cups tigernut flour (I grind my own from whole tigernuts for a coarser texture)
  • 1 teaspoon tapicoca flour
  • 1/2 teaspoon baking soda
  • 1 & 1/2 teaspoons ground cinnamon
  • 2 cups shredded carrots (squeeze out carrot juice by hand - add it to a smoothie)
  • 2 tablespoons mulberries

Preheat oven to 350F

Mix bananas, applesauce, flaxseed 'eggs' and coconut oil in a food processor (my Nutribullet worked great)

Mix together tigernut flour, tapioca flour, baking soda and cinnamon in a large mixing bowl

Combine wet and dry ingredients with the carrots and mulberries into the mixing bowl and stir well to combine.

Spoon mixture into a muffin tray (I love my silicone one - green and clean and easy to use)

Bake for 45-50 minutes, attempt to let cool before eating!
