Saturday night is movie night in the Hanway house (okay, I'll be real, its 'watch GOT over again until Season 7 night), and you cant have movie night without snacks! These Smokey Paprika Zucchini Chips are low carb, high in fiber, easy to make and super tasty! So tasty in fact we ate the first batch straight away and now I have to go and make some more...

Smokey Paprika Zucchini Chips

  • 2 zucchini
  • 1 cup almond flour
  • 3 tablespoons flaxseed meal
  • 2 teaspoons smoked paprika
  • 2 teaspoons Himalayan salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon coconut oil

Preheat oven to 430F.

Make a flaxseed 'egg' by mixing 3 tablespoons flaxseed with 9 tablespoons water.

Mix together all the dry ingredients in a bowl.

Slice zucchini very thinly, then dredge in flaxseed egg, followed by the flour and spice mixture.

Place zucchini slices on a coconut oil greased baking sheet, then bake in the oven for 30-35 minutes, or until golden brown.

Cool on a wire baking rack.
