Gut Healing: Chicken, Kale and Sun-dried Tomato Burgers
I often find chicken burgers to be a little dull, but the combination of mustard and sun-dried tomatoes in this recipe packs a savory punch. And in true #JennyApproved style I’ve even snuck some kale in for extra nutrients and color. These burgers are great for an easy lunch or dinner, and can be wrapped in a lettuce leaf and served with slices of tomatoes and onion, or on top of a pile of leafy greens for a light, bright but satisfying salad.
Chicken, Kale and Sun-dried Tomato Burgers
1lb organic ground chicken
1/4 cup finely chopped sun-dried tomatoes
1/4 cup finely chopped organic kale
2 tablespoons mustard
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon Himalayan salt and black pepper
Place all ingredients in a large mixing bowl and combine well. Shape into 4 equal sized patties, cover and refrigerate for a minimum of 15 minutes.
Place 1 tablespoon of avocado oil in a large skillet on a medium to high heat, and add the burgers. Cook for approximately 6 minutes on each side and serve.
