Gut Healing: Gingerbread Latte Superfood Smoothie

I cannot wait to make this Gingerbread Latte Superfood Smoothie for Husband Hanway and I on Christmas morning (its our first Christmas at home and I’m super excited)!

I love this recipe as it feels super indulgent and is so filling, but is actually a light, bright, balancing and digestion boosting way to start the day, be it the holidays or any day.

Cellular matrix healing collagen powder is blended with skin smoothing, hunger hormone balancing great fats, and zucchini, apple and flaxseed provide a ton of nutrients and blood sugar balancing, GI loving fibre.

And the blend of gingerbread spices are not just there for holiday flavor - fresh ginger is wonderful for digestion (perfect if you will be eating a heavier meal later), cinnamon is incredible for balancing blood sugar and insulin levels, and nutmeg, clove and allspice lend warming depth to keep this smoothie in season and in line with Ayurvedic principles.

Gingerbread Latte Superfood Smoothie

  • 20g vanilla collagen or hemp/pea/rice protein powder

  • 1/2 apple, chopped

  • 1/4 zucchini, chopped

  • 1 tablespoon almond butter

  • 1 tablespoon ground flaxseed

  • 1 teaspoon fresh grated ginger

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon ground allspice

  • Pinch ground nutmeg

  • Pinch ground cloves

  • 1 serving New Chapter Fermented Maca Booster Powder (optional)

  • 1.5 cups almond milk

    Place all ingredients in a blender and blend until smooth.

Gut Healing: No Bake Lime and Collagen Cookie Bars


There are very few store bought protein bars I can recommend to my clients (too much sugar, fillers, etc), so I wanted to develop a great option to include in my 28 Day Guided Gut Healing Program. ⠀

These No Bake Lime and Collagen Cookie Bars are packed with gut loving ingredients including collagen to boost the health of your intestinal lining and grass fed ghee, a delicious source of butyrate, the fatty acid that feeds the beneficial bacteria of your gut. ⠀

I keep these bars in the freezer and just defrost when needed, and if you are packing school or work lunch boxes they will be perfectly chilled when you eat them! ⠀

No-Bake Lime Cookie Bars With Matcha Coconut Drizzle

For the Cookie Bars:

  • 3 cups shredded coconut

  • 2 tablespoons grass fed ghee

  • 20 grams collagen protein

  • Juice and zest of 2 limes

  • 3 teaspoons vanilla extract

  • 10 drops organic stevia or 1 teaspoon honey

For the Matcha Drizzle:

  • 2 tablespoons coconut butter

  • ½ teaspoon coconut oil

  • ½ teaspoon matcha powder.

Place all ingredients in a food processor and mix until combined. Line a medium sized glass dish with parchment paper, and press the mixture down with the back of a spoon.

Melt the coconut butter and coconut oil gently over a double boiler. Stir in the matcha powder until dissolved and the mixture is an evenly green. Drizzle over the bars, then place in the freezer to set for a minimum of 60 minutes.

Gut Healing: Perfectly Balanced Matcha Latte

I love a great Matcha Latte (who doesn’t), but whilst it is a great morning pick me up, it is not a balanced breakfast.

I love to add healing collagen powder for hunger hormone balance and a little great fat in the form of coconut butter to make this an easy ‘throw and go’ gut healing breakfast for when time is tight!

Perfectly Balanced Matcha Latte

  • 1.5 cups of coconut milk

  • 1 scoop collagen powder

  • 1 teaspoon coconut butter

  • ½ teaspoon matcha powder

  • 2 drops organic stevia


Place all ingredients in a pan and warm gently until the coconut butter has melted. Whisk thoroughly or blend gently for a few seconds.

Eat Beautiful: Double Chocolate Chip Collagen Cookies

Hold on to your hats people - I'm suggesting chocolate for breakfast! 

In honor of National Chocolate Day I've partnered with Lilys’s Sweets to create a Gut Healing, Eat Beautiful, Grain Free, Sugar Free, Egg Free, Low Carb, Keto Friendly, Protein Packed Double Chocolate Chip Cookie that is healthy enough to be eaten for breakfast! 

In my opinion, chocolate is a true beauty food, due to the incredible amounts of skin loving antioxidants and phytochemicals found in cacao powder, including the powerful epicatechin that can prevent wrinkle formation.

It is also high in the miracle mineral magnesium, which is needed for over 300 metabolic processes in the body, and is especially important during times of stress, and cacao contains compounds that boost the production of the neurotransmitters serotonin and dopamine- our feel good (feel great) hormones!

For maximum beauty benefits ensure your chocolate has a high percentage of cacao, and is sugar free and dairy free, just like the Lily’s Chocolate I've used in this recipe! 

Double Chocolate Chip Collagen Cookies

(makes 8 cookies)

  • 1.5 cups almond flour

  • 30g vanilla collagen powder

  • 2 x flaxseed eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons warm water)

  • 2 x 1/4 cup Lily’s Dark Chocolate Premium Baking Chips

  • 2 tablespoons almond butter

  • 2 tablespoons grass fed ghee

  • 1 teaspoon aluminum free baking powder

  • Pinch Himalayan salt

Preheat the oven to 350 degrees.

Make the flaxseed egg by combining the flaxseed and water in a small bowl and mixing thoroughly. Set aside to thicken.

Place all the ghee, almond butter and 1 of the 1/4 cups of chocolate chips in a small pan on a low heat and melt gently, stirring throughout.

Place the almond flour, collagen powder, baking powder and salt in a large mixing bowl with the flaxseed eggs

Pour the melted chocolate, almond butter and ghee into the bowl, and mix thoroughly. Leave to cool for a couple of minutes, then fold in the remaining chocolate chips.

Line a baking sheet with parchment paper, divide the cookie mixture into 8 equal portions, then roll into balls and place on the baking sheet, flattening slightly.

Bake for 20 minutes, then remove from the oven and leave to cool as this will help get that crunchy on the outside, soft and chewy on the inside perfect cookie texture!

Gut Healing: Pumpkin Spice Collagen Cookies

These ridiculously good, super easy to make Pumpkin Spice Collagen Cookies have been hands down the most popular recipe from my 28 Day Guided Gut Healing Program. Pumpkin Spice Collagen Cookies with a Coconut Butter Glaze

(makes 8 cookies)

For the cookies

  • 2 cups pumpkin puree

  • 1 cup almond flour

  • 2 scoops vanilla or unflavored collagen powder

  • ½ cup ground flaxseed

  • ½ cup chopped mixed nuts

  • ¼ cup coconut oil, melted

  • 2 teaspoons vanilla essence

  • 2 teaspoons baking powder

  • 1 1/2 teaspoons pumpkin spice seasoning

  • ¼ teaspoon Himalayan salt

  • 5 drops stevia or 1 teaspoon honey

Preheat oven to 375.

Place all ingredients in a large bowl and mix well. Divide mixture into 8 balls, and press them down gently onto a parchment paper covered baking sheet. Bake in the oven for 25-30 minutes, or until golden brown on the outside but soft in the middle.

For the glaze

  • 3 tablespoons coconut butter

  • 1 tablespoon coconut oil

Melt the coconut butter and oil together in a double boiler until melted. Once the cookies have cooled dip the tops into the mixture, then leave to set in the refrigerator or freezer.


Eat Beautiful: Blueberry and Lavender Cashew Cream Smoothie Bowl

Yesterday we celebrated chocolate, today we celebrate another skin loving superfood for #NationalBlueberryDay! ⠀

Blueberries are one of my favourite fruits, a real 'bang for your buck' option. They are low in sugar, and packed with antioxidants and polyphenols that lower inflammation, improve eyesight and increase cognitive function. They are also a true #BeautyFood- containing high levels of carotenoids that convert to retinol in the body. ⠀

When they are in seasonal I love to eat a handful (or two) of these purple powerhouses a day - in a smoothie, in a salad, or simply straight up.⠀

Here is a fresh twist on a Blueberry Superfood Smoothie - I've used soaked cashews to add a rich thickness to the smoothie, and the use of fresh lavender makes it taste like summer in a glass! ⠀

Blueberry Lavender Cashew Cream

  • 1 cup blueberries, fresh or frozen ⠀

  • 1 scoop vanilla plant-based (pea, rice or hemp) protein powder⠀
